Ingredients
Pasta:
8 oz rotini (or substitute with penne or elbow macaroni)
Chicken:
3 cups shredded cooked chicken (a perfect use for leftovers)
Vegetables:
1 cup shredded carrots
1 cup finely diced celery
1 cup finely diced bell pepper
Dressing & Flavor:
¾ cup blue cheese dressing
½ cup blue cheese crumbles
¼ cup hot sauce
¼ cup chopped fresh dill
¼ cup chopped fresh parsley
2 tbsp lemon juice
Salt and pepper, to taste
Instructions
1. Cook the Pasta:
Bring a pot of salted water to a boil and cook the pasta according to the package directions.
Once done, rinse with cold water and let it cool completely.
2. Prep the Chicken:
Shred your cooked chicken into bite-sized pieces if not already done.
3. Combine Base Ingredients:
In a large bowl, toss together the cooled pasta, shredded chicken, carrots, celery, and bell pepper.
4. Add the Dressing and Flavors:
Pour in the blue cheese dressing, crumbles, hot sauce, chopped herbs (dill and parsley), and lemon juice.
5. Season to Taste:
Sprinkle in salt and pepper as desired, adjusting to your taste preference.
6. Mix Thoroughly:
Gently toss everything together until the ingredients are evenly coated and combined.
7. Chill Before Serving:
Cover and refrigerate for at least 30 minutes to let the flavors come together.
